½ Ib. Flounder either sliced thinly or cut into ¼
inch cubes
½ cup fresh limejuice
½ cup fresh lemon juice
1 small jalapeno no seeds and finely chopped
¼ cup finely chopped red onion
¼ cup finely chopped red pepper
1 tomato -remove skins and seeds finely chopped Olive oil
2 tbs toasted seeds Remove skin and bones
Place in bowl and cover fish with the lemon limejuice, onions, peppers
and jalapeno Season with salt and pepper to taste and cover.
Refrigerate for about 4 hours-stirring twice
Drizzle with olive oil when serving
PRESENTATION
Place ceviche on plate with a fresh half lime, sprinkle on toasted
sesame seeds and fresh tomato.
