Season with
sea salt and cracked pepper
Place in preheated fry pan browning on both sides and place into
400 degree oven until fish is cooked
Set aside and let rest
CHILPOTLE
PEPPER BUTTER
2
oz chilpotle peppers
½ lb unsalted butter
2 tbs chopped parsley
Juice of 1 lime
Salt and pepper to taste
Place
all ingredients into food processor and blend until smooth
Place mixture on parchment paper and roll
Place butter in freezer until hardens.
MARINATED
VEGETABLE LINGUINI
Julienne vegetables-carrots, zucchini, celery root, red onion and
green onion
Drizzle mixture with olive oil, juice of 1-2 lemons to taste
Add 1/2 bunch chopped basil
Salt and pepper to taste
