Teriyaki BBQ Baste
1 tbsp. oil
1 tsp. sesame oil
2 tbsp. brown sugar
¼ cup soy sauce
1 ½ -2 tbsp. sambal oelek hot sauce
1 tbsp. lime juice
¼ cup honey
1 orange, juiced
¼ cup cilantro leaves, coarsely chopped
4 cloves garlic, minced
1 tsp. black sesame seeds
1 tsp. white sesame seeds
1 green onion, very finely sliced
2 x 10-12 oz 1-1 ½”- thick shark steaks
2 tbsp. oil
1 tbsp. King of the Q Bayou Bite Cajun Seasoning or your favorite
Cajun seasoning
To prepare the Orange Teriyaki Baste, into a bowl
combine sesame oil, brown sugar, soy sauce, sambal, lime juice,
honey, orange juice, cilantro, garlic, white and black sesame seeds
and green onion. Mix well to combine and set aside
Using a brush, brush the shark steaks on one side
with oil, flip over and repeat on other side of shark steaks. Season
shark with Cajun seasoning, on both sides, pressing the spices into
the flesh to adhere.
Preheat grill to very high, about 600°F.
Place steaks onto a very hot grill and cook shark
with the lid open for about 6 to 8 minutes per side, basting frequently,
until fish is just cooked through and flakes easily with a fork.
Remove shark steaks from grill and serve with lime
wedges.
