Grilled
Banana Leaf Wrapped Grouper

cup thinly sliced fresh mango
1 cup diced fresh pineapple
1 Vidalia onion, thinly sliced
1 red pepper, thinly sliced
¼ cup orange juice
2 oz Rum
2 tbsp. chopped fresh cilantro
salt and pepper

Grouper filet, 6oz each
2 tbsp. bbq seasoning
4 Banana leaves, cut to 12" squares

tsp. Butter
In a bowl combine
the mango, pineapple, onions, peppers, orange juice, rum and cilantro.
Season to taste with salt and pepper and set aside.
Season grouper
fillets with bbq seasoning rubbing the seasoning into the flesh.
Warm the banana
leaf squares over the grill to make them more pliable. Place one
square of banana leaf on a flat surface. Place on piece of grouper
in the center and cover with ¼ of the marinated tropical
fruit and a little of its juice. Top with a teaspoon of butter.
Fold the sides of the leaf over the fish creating a bundle. Repeat
with the other three portions.
Using butcher
twine secure each bundle.
Preheat grill
to medium high.
Place the grouper
bundles on the grill and roast for 12 to 15 minutes turning once.
Remove from
grill and allow too rest for two minutes before opening. Being careful
of the escaping steam.
