Caribbean Lobster Tails with Beer BBQ Sauce

x 8oz Caribbean Lobster tails
¼
cup butter
1 medium Onion, diced
1 tbsp. Garlic, minced
1 bottle Beer
½ cup gourmet BBQ sauce
2 tbsp. Corn syrup
salt and pepper
Place the lobster
tails on a flat surface and cut the shell down the center on the
curved tail, using kitchen sheers. Use your hands and spread the
shell apart and pull the meat out, leaving it attached at the tail
end. The meat should now rest on the top of the hollowed out shell.
Cover and refrigerate until needed.
For the beer
bbq sauce, sweat the onions and garlic in half of the butter until
soft but not browned. Add the beer, bbq sauce and corn syrup and
bring to a boil. Remove from heat and stir in the remaining butter.
Season to taste with salt and pepper and set aside.
Preheat grill
to medium high.
Place the lobster
tails on a grill topper and place into the grill with the lid closed.
Roast the tails for 8 to12 minutes basting regularly with beer bbq
sauce, until the tails are just cooked through.
Serve with grilled
filet mignon and new potato salad
